So I had to go run up to Food Lion and since we live out in the middle of no where it takes about 40 minutes round trip. There is a little family owned market/liquor store/gas station about 10 minutes away but I'm always afraid that if they would have vanilla extract that it would be a lot more expensive than if I just went to Food Lion or the only other groccery store we have in town McKay's. So by the time I got back with the vanilla and added it the Earth Balance was so soft that when I turned on the mixer and the butter got a whipped look. And I have to say that it made the best drop cookies I have ever made. They are crisp yet slightly chewy and oh so full of flavor!
After the first batch cooled enough I had my cookie monster give them a try and I got a hug and was told that they were the best cookies ever in the whole wide world! Now what you don't know is we are in this phase that everything is the best ever in the whole wide world! I have given her a juice box and been told that I am the best ever in the whole wide world! But I knew they must be really good because she asked for more and let me take some pictures of her.

I found this recipe on www.verybestbaking.com, the makers of Tollhouse, and made the changes necessary for them to be safe for me to enjoy. The only changes that I made to the original recipe was to substitute the butter with Earth Balance Sticks and instead of using Nestle Toll House chocolate chips I used Chocolate Dream chocolate chips which are dairy-free.
1 1/2 cups Unbleached All- Purpose Flour
1 tsp baking soda
1 cup (2 sticks) Earth Balance sticks, very soft
1/2 cup chunky peanut butter
1/2 cup granulated sugar
1/2 packed brown sugar
1 tsp vanilla extract
1 lg egg
1 bag Chocolate Dream Dairy-Free chocolate chips
1. Combine flour and baking soda in small bowl.
2.Beat butter, peanut butter, granulated sugar, brown sugar, and vanilla extract in a large mixing bowl until creamy. Beat in egg.

4. Drop dough by rounded tablespoon onto ungreased baking sheets.
5. Bake for 9 minutes or until edges are set but centers are still soft. Cool on baking sheets for 4 minutes; remove to wire racks to cool completely.
